J. Lassalle

Jules Lassalle established this family-owned Champagne house in 1942 in the village of Chigny-Les-Roses on the Montagne de Reims. A master of his craft, he established a signature style of elegant, tightly knit wines with a certain ampleur. When he passed away in 1982 his wife, Olga, and their daughter, Chantal Decelle-Lassalle, stepped in and took over the estate, upholding Jules’ high standards and progressively pushing the domaine to the next level. In 2006 Chantal’s daughter, Angéline Templier, joined the estate as winemaker. Their twenty-eight-year tradition of “une femme, un esprit, un style” (one woman, one spirit, one style) holds true today more than ever.

Brut Preference

The anchor of the Domaine’s terroir and embodies the Spirit of the House. Typical Assembly: 60% Meunier, 20% Chardonnay, 20% Pinot Noir. Dosage 8g.

Brut Rose 1er Cru

A signature Pinot Noir from the Montagne de Reims with beautiful maturity. The first nose evokes licorice, the signature of Pinot Noir, then red fruits (strawberry, cherry) appear subtly. Typical Assembly: 70% Pinot Noir, 15% Chardonnay, 15% Meunier. Dosage 8g.

Cuvee Angeline Brut Rose 1er Cru

Angeline, 3rd generation of Maison Lassalle, decided to develop the “Cuvée Angeline” as a rosé aged in oak in celebration of the 80th anniversary of the Maison. Produced from the same plots as the Brut above. Typical assembly: 60% PinotNoir, 40% Chardonnay; 7 years on lees. Dosage 7g.

Cuvee Angeline Brut 1er Cru

Created in 1978 by Jules and Olga to celebrate the birth of their granddaughter, this cuvée is now the emblem of Maison Lassalle. From two plots in Chigny les Roses, “les Houssets”, Pinot Noir, 1972, and “les Pécherines” Chardonnay, 1973. The nose is carried by white peach and pear compotes, with a touch of black fruits and notes of brioche and crushed hazelnuts. Typical assembly: 60% PinotNoir, 40% Chardonnay; 10 years on lees. Dosage 7g.

Chigny les Roses Coteaux Champenois

Harvested from old vines planted in the 1970s in the village of Chigny-les-Roses, the wine has an unmistakable spine of minerality from the region’s chalky soils. It’s as classy as its terroir would suggest, evoking dried rose petals and black tea.

Diebolt-Vallois

Diebolt-Vallois champagnes is a united family: Jacques Diebolt and Nadia Vallois,. Their two children, Arnaud and Isabelle, who are taking an ever increasingly active part in the running of the estate. The Diebolt family has lived in Cramant since the end of the 19th century, and the Vallois family has been cultivating vines in Cuis since the 15th Century. Although Jacques Diebolt started working with his grandfather, it was not until 1978 that the estate underwent a sea-change with the extension of the estate and the construction first of all of cellars, and then a winery. The Diebolt-Vallois champagne vineyards cover 11 hectares, of which the great majority are in Cramant and Cuis, two villages which are classed as Grand Cru (Great Growth) and Premier Cru (First Growth) respectively. Other plots are in Chouilly (another Grand Cru village) and on the hillsides at Epernay (vineyards called Les Toulettes and Les Hautes Justices). All of these are planted entirely in Chardonnay. Some vines on the Montagne de Reims and the Côte de Bar complete the estate's holdings, and these are planted to Pinot Noir and Pinot Meunier.

Tradition Brut

Ripe and rich but quite lively, with harmonious balancing acidity giving the flavors good definition. Finishes ripe, long and generous, with excellent cut. Typical assembly: 40% Chardonnay, 30-40% Pinot Noir, 20-30% Meunier

Brut Rose

This elegant pink champagne offers abundant red fruit aromas: raspberries, red currants and wild strawberries. The grapes come mainly from “Les Toulettes” vineyard in Epernay, with some additions from the Grand Cru, Bouzy. Typical assembly: 63% PinotNoir, 27% Chardonnay, 10% Pinot Meunier. Dosage 4g.

Blanc de Blancs

Diebolt-Vallois' Blanc des Blancs is 100% Chardonnay from grapes grown mostly in Cuis and Epernay and a small amount from Chouilly and Cramant. Flavors of ripe citrus, apple and tangerine waft from the glass and on the palate compliment the tense structure and nuances of the wine.

Fleur de Passion Brut

Fleur de Passion is the jewel in the range from the house of Diebolt-Vallois. Fermented and aged in barrels, it is only made in the very best years. The grapes come from 7 or 8 plots of old vines planted on hillsides - especially the fields known as Les Buzons - in the village of Cramant (village classed 100% Grand Cru). These vines are all over 40 years old and many of them are 60 years old or even more. Typical assembly: 100% Chardonnay.
